Sometimes it gets a little costly to go on a diet……..but maybe you would like to try this inexpensive idea.  Make vegetable soup………it works if you make it homemade…..NO MEAT. 

  • Start with a medium pot….
  • Dice 1 onion…
  • 8-10 regular sized carrots…(slice in large, bite sized pieces…they take longer to digest if they are larger)…
  • One bunch of celery….(8-10 stalks of celery)…(slice in large, bite sized pieces)…
  • 1 large can of tomato paste…

Please note:  you can change these ingredients around…add or use less, etc….it’s up to you…just vegetables only.

Over medium heat, pour about 1 tablespoon vegetable oil in the bottom of the pot; saute the onion (with a little garlic, if you prefer); continue with carrots; then celery….put a lid on the pot and steam for about 15 minutes.  Then add tomato paste and fill the pot with water just above the vegetables.  Add salt and pepper to taste; parsley, and any other seasoning you enjoy.  Stir well and cook till tender.  If it seems a little boring, put in a small potato, but no more (they are fattening if you eat too much).  Fill with more water if it gets a little thick.  This can last for a few days…keep refrigerated.

    I sometimes eat the veggie soup weight watchers style. It has no points in it. I lost 130 lbs on weight watchers so I like their recipes. Good post and I think I might make some tonight.

    Add the potato! They are not, I repeat, NOT fattening. It’s the stuff we top them with or the oils we fry them in that make them fattening. Make your oil of choice olive oil, it’s healthier than the other processed oils. Don’t forget all the other vegetables that go well in soups and lastly, don’t suffer though boring. Learn to use herbs for flavor. A good way to start is to use Mrs Dash. They have a variety of combinations and if you read the labels, you’ll learn which ones go together. Good luck!
